Moroccan carrot and onion fritters

These are so simple to make. You only need one bowl to mix everything together too. No fancy gadgets used in the making of this dish!


They are great in a lunchbox, for dinner or as part of a platter at a party.



Makes: 8 -12 fritters

Time to make: 10 minutes + 25 minutes cooking


You will need...

2 cups carrots, finely grated (2 big carrots)

1 onion, finely diced

2 garlic cloves, crushed

1 can of chickpeas, drained

1 tsp rosemary

1 heaped tsp Moroccan spice

1/2 cup chickpea flour


How to create...

  • Preheat your oven to 190’

  • Mix everything together in a bowl, roughly smashing the chickpeas using a fork so some are whole and some are crushed.

  • Divide the mixture into patties and place on a tray lined with baking paper.

  • Bake in the oven for 25 minutes or until golden and a little crispy on the edges.


I enjoyed these fritters with sweet potato wedges, spinach, cucumber, Krispy Kale and chia seeds.


I also made some smaller patties for my lunch the next day for wrap fillings and bit size snacks so I ended up with 10 patties form this batch.

Foods like ... carrots, pumpkin, winter squash, sweet potatoes, apricots, mangoes and papayas.
