Chocolate Rice Crispies

I was inspired by one of the puddings offered to the kiddies at lunch and wondered how simple it would be to make a healthier version. Well it turns out it's super simple ....

It literally takes no time at all and the chocolate is made from raw cacao powder, which is rich in anti-oxidants. (1) (2) (3)

Serves: 20

Time to prepare: 10 minutes

Time in the freezer: 1 hour


Ingredients...

  • 1/2 cup coconut oil

  • 1/4 cup raw cacao powder/ cocoa powder

  • 1/4 cup agave nectar (or honey)

  • 4 1/2 cups of rice pops (gf)

  • 3 tsp chia seeds (optional)

  • 3 tbsp dark chocolate chips (optional)

How to create...

  1. Melt the coconut oil in a pan until melted.

  2. Take off the heat and stir in the cocoa and agave nectar/honey.

  3. Once it turns into a chocolatey mixture pour in the remaining ingredients and mix until the pops are coated in chocolate.

  4. Grease a baking tray with some coconut oil.

  5. Tip the mixture into the tray and press down evenly.

  6. Freeze for an hour.

  7. Cut into squares and store in an airtight container in the fridge.

This recipe is plant based, gluten free, dairy free, refined sugar free, vegan and is full of wholesome goodness. All the ingredients I use I try to use organic, local and fair trade where possible and necessary but it’s up to you to choose what you want to use.
